Dulce de leche 磅蛋糕




老妈看了八频道的“食在好源头”后学到了蒸鸡精的方法,所以我就顺便的搭便车,把炼乳放入一起蒸,做了我喜欢的 DDL (因为蒸鸡精需时 7 个小时,DDL只需 4 个小时而已,一石二鸟。。。呵呵)

其实蒸鸡精很简单,但是时间很长,方法就是把甘榜鸡切小块 (越小块越好),把一个小盘子倒反放入一个大碗公内 (小盘子就会呈一个 n 形,但是盘子下面还有空间装鸡精的),把鸡放在反过来的小盘子上 (小盘子的作用就是阻隔鸡精,让鸡精流下),用锡纸把整个大碗公包好,放入一个大蒸炉内蒸 7 个小时 (电视上是说12 个小时,我没那个时间。。。呵呵) 无须任何的调味料,就只是鸡而已。

有了 DDL,接下来就是再次的尝试 DDL 磅蛋糕啦,这次我用了普通磅蛋糕的食谱,但是用了双倍的 DDL 来代替糖 (磅蛋糕的基本食谱就是粉油蛋糖的份量相等)。虽然是用了双倍的炼乳,但是炼乳含糖量的百分比是比较少的。

起初我也担心这样的蛋糕会不会太湿润了,会不会太甜了,但是成品我觉得甜度 ok,不会太湿润,最重要的是这次终于做出了浓郁的奶香 DDL 磅蛋糕了。

这次也发现了一个更可以确实量出相等份量的磅蛋糕方法。先把鸡蛋打散,量出份量后,才量其他的主材料 (面粉,牛油,糖)




材料:
鸡蛋 4 粒 (237 克)
室温牛油 237 克
Dulce de leche 474 克
面粉 237 克 (我用低筋面粉 137 克,普通面粉 100 克)
发粉 1.5 小匙
盐 1/4 小匙


做法:

1。牛油和Dulce de leche搅拌均匀,加入盐,拌匀

2。分次的加入鸡蛋,确保每次拌匀后才再次的加入鸡蛋液

3。把面粉和发粉混合过筛,加入 (2) 内,以刮刀切拌均匀

4。倒入烤盘内,放入预热后的烤箱,160 度烘烤约 35-38 分钟即可

  4. hi,i also have that kind of similar double boiler, very convenient to make chicken essence! it's have quite a while the last time i saw someone make something out of ddl,..aargh, i dont even know when to make my own ddl!
