母亲节快乐 - 歌剧院蛋糕 (Opera Cake)




原来就知道这个蛋糕非常的美味,但是从来没想过会自己动手,因为好像很多步骤,很难做似的。

但是后来在 CCM 的家看到她形容得那么简单,再加上她一做再做的“引诱”,把持力不好的我终于都动手了,做了这个蛋糕给老妈,祝她母亲节快乐,天天健康快乐!

各别的材料都蛮容易做出来,只是当我要做最后组合的时候,发觉我家大王子把咖啡糖浆倒掉了,真气死我了!

兴致勃勃要“大展身手”的时候竟然缺欠了一个这么重要的材料。。。。没办法,只好再从新煮过,再慢慢的等它凉了。

再来就是我的蛋糕从四方形慢慢修成了长方形。。。这都怪我在切片的时候没有量好好,所以蛋糕不平均,这边修一点,那边修一点,最后就变成这付“猫样”了。。。呵呵

我也遵从 CCM 的指示,三天前就做了这个蛋糕,放在冰箱第三天才品尝,因为没有得比较,所以不晓得如果隔天就吃是什么味道,但是家人都吃得到杏仁的味道蛮浓郁的。

其实这个蛋糕看似复杂,但是像 CCM 所说的,如果东西都准备好了,一样一样的组合,还蛮简单的 (CCM 的家有很清楚的步骤图)。

这么简单就做出一个这么好吃高贵的蛋糕 (原本应该是属于高贵的,只是我的功夫不到家,糟蹋了它。。。呵呵),你不心动吗?

原食谱CCM

材料:

(A) Joconde(杏仁蛋糕)
100克 杏仁粉
80 克 细糖
30 克 面粉
3 粒 鸡蛋(A蛋)
20克 融化奶油

2 粒 蛋白
20 克 细糖


做法:
鸡蛋和细糖搅拌均匀,杏仁粉和面粉拌匀过筛,加入鸡蛋,搅拌至均匀,加入融化奶油拌匀。

蛋白加细糖打至硬性发泡,然后将蛋白霜和杏仁面糊混合均匀(做法和戚风做法相同)

将面糊倒入已经预热的烤炉,用170' C 烘烤 15 分钟。蛋糕烘好后,放在架子上待凉。



(B) 咖啡糖浆
100克 水
30克 细糖
1/2小匙即溶咖啡粉


做法:
将全部材料拌匀后,以小火煮滚,待凉。


(C) Ganache(巧克力溶浆)
100 克 巧克力(cooking chocolate)
40 克 牛奶
40 克 打发鲜奶油

做法:
巧克力切小块,加入牛奶中,放在热水上慢慢搅拌至巧克力融化成滑滑的液体状。待凉后将鲜奶油打发(打至6分发),然后加入巧克力糊慢慢拌匀,备用。


(D) 奶油馅
3 粒 蛋黄
100克 细糖
30克 水
160克软化奶油
1大匙 kahlua酒(或者rum,或者 1小匙vanilla)


做法:
水+细糖煮溶,稍等片刻,待凉。

将蛋黄打发,慢慢倒入煮溶糖水,记得一定要一边搅拌一边倒入糖水。

搅拌至蛋糊发白,然后加入软化奶油,再搅拌至均匀松发,最后倒入咖啡酒。


最后组合:

1,先准备好杏仁蛋糕的部分,在烘烤蛋糕的同时,可以煮咖啡糖浆。

2. 先准备巧克力溶浆 ,因为刚刚煮好的溶浆是很稀释样子的,放上10分钟后,巧克力溶浆会变得很浓稠。

3.最后才准备奶油馅。

4.将所有的材料一一准备好,最后才将蛋糕做组合。

5.将一片杏仁蛋糕反面朝上,涂上咖啡糖浆。

6.涂上1/3的奶油馅。

7.涂上巧克力溶浆。

8.再放上第二片杏仁蛋糕。 一直重覆5-7的程序至完。

    这个蛋糕在书上看到时看到这么多步骤我直接skip,但是ccm说到很容易酱,所以我也心动了。

  14. ESTHER,你做到很不错了。。还分成这么多层。我记得当时我做时,蛋糕分量不足让我切多片,结果,只有区区那一两层而已。

    还有HOR。。讲起咖啡糖浆。。我想起上个星期我也是要用到咖啡做夹馅时。。。既然家里没咖啡了。全部材料都齐全了。。就是忘了咖啡包刚好老的喝完了。。。结果。。我在厨底找啊找。。。哈。。既然给我找到一条。真的是LUCKY 中的LUCKY。若找不到,我又要特地出门第二趟买咖啡了。。呼!

    其实我的也切不到几片,所以蛋糕才那么小。。。呵呵
    如果真的没有咖啡也得出门买了,如果是我一定冲着出门,冲着回家,因为头脑一整个被烘焙冲晕了头。不过这个时候发生的机率通常是因为我把蛋糕搞砸了,得从新再来 :P

    I didn't check Facebook, I didn't monitor comments,
    & I didn't watch my stats. There was guilt in not writing & if I didn't see any evidence that I

    I picked through my page hits over my four month absence & was shocked that people were still tooling around even when I wasn't here. And then I took a peek at how people were finding me when I was so busy hiding from them. As expected, I found mostly Google searches for weightylife or some derivation, but something had changed in my absence. My brand new #2 & #3 search terms were--I discovered after a quick jaunt to Google myself--searches for porn. I was a little appalled that something I've written about
    quite often, I might add touches on enough key words to get
    some pretty frequent hits in the middle of the night. Dave's response: "Gee, Sara, you're right.
    It IS shocking that people use the Internet to find
    porn." So, if you found me searching for porn, I likely proved a huge disappointment. I did write a post once about the thrill of buying new bras, but that's as salacious as I get around here. But now I'm pregnant so that clearly means things will get kicked up a notch: there's nothing hotter than cankles, flatulence & debilitating heartburn. So all you porn-hunters better stick around. It's about to get hot in herre. For all of those who are here without thinking I am a porn star: thanks for sticking around. Thanks for bolstering me up. Thanks for not expecting me to take off my clothes. It's the little things.
