17小时中种全麦土司


我的17小时中种土司又出现了。。。呵呵

买了这个圆形的三能土司模一阵子了,一直都没有尝试用它来做土司,因为不晓得要放多少的面团才适合。

上网查了也还是找不到,也曾经尝试过想要用 formula 计算容量出来,后来看到那个 formula 后。。。一整个头晕目眩,那些 formula 离我太远了,现在它认识我,我不认识它!没办法,就用回原始的方法,也算是 formula 的一种 -“Trial and error”。。。哈哈哈

后来,终于大概大概找到了一个还算可以的面团重量 - 175g。。。希望这个就是正确的吧,不要等我下次做的时候又再出问题就惨了。

面包还是一概的软,无庸置疑!除了土司,还做了几个山寨版的牛角餐包。我的这个山寨版的实在有够糟糕的,出来的面包只有一个层次而已。。。哈哈哈





原食谱苏慢慢之烘焙备忘录

参考茄子

中种
高粉 70% (210 g)
水 40% (125g)
鲜酵母 2% (干酵母 1小匙)
盐 1% (3 g)
奶粉 2% (6 g)


做法:
揉到光滑,放冰箱17小时发到约2.5倍大。


主面团
高粉 (20 g)
全麦面粉 (70g)
水 29% (87 g)
盐 1% ( 半小匙)
鲜酵母 0.5% (干酵母 1/2小匙)
砂糖 10% (30 g)
无盐牛油 7% (21 g)


做法:

1。 中种切小块和主面材料(除黄油)一起放入面包机搅拌40分钟,20分钟后加黄油。

2。 发酵30分钟

3。把面团分割 175g (圆形土司用) 以及小餐包所需要的各别份量;滚圆;松弛 15 分钟

4。 土司:卷两次,间隔12分。小餐包:自由发挥

5。 加小杯热水一起罩住,发酵 45 mins (8.5分满)。 170度预热15分钟,喷水,烤 25 分钟即可
